Healthy DIY Poke Bowl
One day, I realized I was addicted to poke. I would get it at least once a week. After a visit to Ijji sushi, I started questioning the quality of the fish at poke places. Thinking about it made me feel slightly icky. Paired with the intense bloating from the high sodium poke sauces, I decided to make my own poke bowl at home.
The ingredient list looks intimidating, but I promise it's not hard to make. You can add & leave out ingredients as you please.
serves 2-3
Ingredients:
sashimi grade fish (1 lb) -- I got yellowtail & tuna; you can usually find some sashimi grade fish at local fish markets
2 tsp sesame seeds
2 tbsp soy sauce
brown sugar
edamame
sweet shitake mushrooms - recipe here
ear of corn
1/2 red onion
2 cloves of garlic
2 spring onions
1.5 cups of rice (my fave - super moist & squishy)
seaweed salad (you can find this at an Asian supermarket)
1 lemon
sesame oil
apple cider vinegar
pickled ginger (or you can pickle your own)
1 cucumber
Shichimi Togarashi- this stuff is AMAZING
more stuff you can add-on
mango (highly recommended)
avocado
furikake

instructions
preheat oven to 400 degrees F
sprinkle corn with sesame oil, cover corn in foil, & pop in oven for 25 minutes
cook 1.5 cups of rice in rice cooker
mix cooked rice with 1 tsp of apple cider vinegar
thinly slice 1/2 red onion & sprinkle with 1 tsp of apple cider vinegar
chop 2 cloves of garlic & 1 cucumber
heat pan to medium heat, add sesame oil, & brown garlic
mix corn, chopped cucumber, sliced spring onion, roasted edamame, sliced onion, garlic in a large bowl
add 2 tbsp soy sauce, 1 tsp grated ginger, 2 tbsp brown sugar, 1 tbsp sriracha, 2 tsp of lemon juice & mix
chop up fish into cubes.. you'll need a sharp knife
when you're ready to eat, add fish to veggie bowl & mix
place rice at bottom of bowl, add veggie mixture, & top with ginger, sesame seeds, Sriracha, Shichimi Togarashi, & lemon juice.
